Beijing’s skill in roasting beef and mutton

 

 

Beijing roast beef and mutton originated from a traditional food of the northern nomadic nationality. In the late Ming and early Qing Dynasty, the roast beef and mutton became popular with ordinary people. Kaorouwan(Roast Meat Wan) and Kaorouji(Roast Meat Ji) are two most famous roast meat restaurants in Beijing. Set up in 1686, the restaurant got its name Kaorouwan since its founder had his family name of Wan. It is best known for its roast beef. With its unique cooking techniques and careful selection of ingredients, the beef cooked by the restaurant is said to be as tender as tofu. The Kaorouji is located by the Yinding Bridge in Shichahai, which was first opened in 1848 as a roast meat stall. The restaurant got its name Kaorouji since its founder had his family name of Ji. It has long enjoyed a good reputation for its roast mutton, stressing its selection of quality meat and unique ways of cooking. So its roasted meat is famous in Beijing for being delicious and tasteful, fresh and tender but not greasy.
